This time we took some carrots and cauliflower, tossed them with some organic maple syrup and a hefty couple pinches of our Mexican in a Minute all-natural seasoning blend.
This is one of those recipes that you just stumble across by accident but it turns out to be the best thing ever. Kristin was trying to season some cauliflower the other day, but didn't want to use any oil, and decided to use Mexican in a Minute with maple syrup - it ended up being absolutely fantastic! 🔥🔥🔥 We took a large bowl and added the cauliflower then drizzled about 1/3 cup cup of maple syrup, added about a tablespoon of Mexican in a Minute, then mixed it really well.
We did the same with the carrots then added them both to separate baking pans lined with parchment paper and baked. (We found that using a little olive oil works better for the carrots 🥕 but you can totally skip if you want oil-free carrots.) We roasted the carrots and cauliflower at 425° for about 45 minutes. Squeeze fresh lime juice over the carrots and cauliflower after roasting.
Cilantro Cream Sauce Recipe:
1/2 cup hemp seeds
1/2 cup cilantro 🌿
1/2 avocado 🥑
1 clove garlic 🧄
1/2 jalapeño or Serrano 🌶
1/4 or more water 💧
Juice from 1.5 limes 🍈
A pinch of salt 🧂
Put all ingredients in a Ninja bullet blender until creamy.
We used @ottosnaturals cassava flour to make our tortillas.
From there, add your favorite toppings and enjoy!
